Antioxidants play a pivotal role in food preservation by restricting the oxidation processes and promoting healthier body conditions. Many dietary supplements, nutraceuticals and functional food ingredients contain antioxidants that need to monitor for marketing regulations. Manufacturers, growers and suppliers need accurate and detailed information about the antioxidant capacity of their products and raw ingredients. They are evaluated by different assays based on hydrogen atom transfer (HAT), single electron transfer (ET), reducing power, and metal chelating, among others.
